For 2010 I have devised several specially-themed classes. These classes concentrate on a single subject so it can be explored in greater depth.

Susan And On Rue Tatin In Arizona Experience France in the heart of Arizona, November 8-12, 2010! Join me as I offer cooking classes throughout the state, under the auspices of the University of Arizona Parents and Family Association. Together we'll make meals to delight the palate and inspire you to get into your own kitchen and regale your family and friends! Cook side-by-side with me as we transform local, seasonal Arizona ingredients into sumptuously simple French meals. Each class is hands-on, so that you can learn the tips and tricks that I've spent a career searching out and perfecting. We'll make everything from soup to nuts (and as we're celebrating France, we'll also celebrate my newest book, Nuts In The Kitchen). Each meal will include four courses accompanied by special wines and cheeses. The atmosphere will be casual, the instruction professional, the tastes and experience unforgettable! Please join me for a one-day class, or sign up for several as menus will vary from one spot to the next. If you're interested in sampling the four-course meal we'll prepare we will set your place and be thrilled to welcome you!
The cost for these very special classes is $275 per person.

One-Day Classes in Paris with Susan Herrmann Loomis
On Rue Tatin Paris classes will, as of January 2010, be held at the luxurious cooking studio Wa-Bi Salon , a space created by multi-starred Chef Dominique Bouchet. Here, in a serene and beautifully appointed professional kitchen, I will host hands-on classes which, as is always true at On Rue Tatin, focus on technique. As we work our way through recipes designed for the home cook, using the finest seasonal, locally produced ingredients, we will laugh, enjoy, and finish our class together enjoying the meal we have just prepared, accompanied by gorgeous wines and artisanally made cheeses. Morning classes will begin with a market tour, then we will return to Wa-Bi Salon to prepare what weÂ’ve just purchased. Evening classes begin with multiple tastings, and proceed to a candle-lit dinner. Each provides a rich, fulfilling, culinary, cultural, and gastronomic experience!

All About Seafood Class I fell in love with seafood when I wrote my first and best-selling book, The Great American Seafood Cookbook. This seafood class is my chance to share, hands on, my passion for seafood with you. During our seafood class together, we will cook exotica from French waters as well as familiar species of seafood, and you will learn everything from filleting to presenting a perfectly cooked piece of fish on a plate. The class will take us to a small port city where we will see the boats come in, visit a state-of-the-art fish auction, sample regional seafood dishes, and get a feel for the French and their special relationship with seafood. Recipes are geared for the seafood aficionado and the uninitiated. Everything during the seafood class is aimed at delighting your senses, and teaching you the A to Z of seafood. Autumn in Asheville I'm more than thrilled to be returning to Asheville, a small jewel of a city whose architecture has remained mostly untouched since well before the Great Depression. Home to the Biltmore Mansion, surrounded by lush and fertile farmland, Asheville has a burgeoning and very high-quality local food scene, and a strong farmers' market system. Having visited Asheville and its farmers markets, I know what treats are in store for us, from every local fruit and vegetable at its prime, to meats, wonderful breads, artisanal cheeses, glorious cornmeal and yes, even nuts! For three mornings we will cook together in a professionally equipped kitchen, and I will make sure that you leave the class having mastered basic French technique, and with a collection of recipes you can use to regale your family and friends. ....We will also spend an afternoon visiting an artisanal food producer(s) not too far from Asheville, to get an inside feel for the local food producers story. Price for the three day class, which includes three hands-on classes, three meals, and a field trip with samples is $1,000. All deposits to On Rue Tatin West - Asheville, are non-refundable.
